Just past 12K and with a trip or two coming up may need to push that service to 13 or 13.5K at the worst. Bike seems fine. great gas mileage...sounds good..no problems. Am I risking anything by waiting another 1500 miles max for the 12K service?

Damage? No. The worst abuse you may have inflicted is riding in NYC traffic, where riding in slow-go summer heat likely involves borderline engine overheating and at other times possibly many short trips for errands. That degrades conventional engine oils more than highway cruising does, but not by much. The valve adjustments after the first one are also less worrisome as being an actual serious violation. Anything else is nearly worry free, so clear your conscience and enjoy your rides.
